This one’s a solid twist on an old-school favourite — Apple Pie Bread & Butter Pudding. Rich, simple, and it always goes down well in our house.
I’ve used croissants instead of the usual sliced white bread. They soak up the custard beautifully and bake up with that golden top and soft, pudding-like centre. The real flavour comes from Smokey Joe’s Apple Pie Seasoning — a blend of apple, cinnamon, nutmeg, and a bit of vanilla. It gives the whole house that warm, spiced-up smell, like something’s been baking away all afternoon.
I still remember Mum making this kind of pudding with old bread when the weather turned cold, usually after Sunday lunch. It was simple but comforting, and always a bit of a treat.
This version’s easy to throw together and a good way to use up leftover croissants. It holds up well the next day — if there’s any left. Serve it warm with cream, or just straight from the fridge. I wouldn't expect any leftovers!

What you need
⅔ Cup Raisins
2 tablespoons of dark rum
4 Large Eggs
2 Cups Milk
1 Cup Sugar
3 tbsp Unsalted Butter
½ tsp Ground Cinnamon
1/4 tsp Nutmeg
¼ tsp Salt
½ tsp Vanilla
4 Cups two day old Croissants, torn up (or Brioche bread)
1 Large Granny Smith Apple, diced small
Vanilla ice cream, for serving
2 tbsp Smokey Joe's Apple Pie Seasoning
What to do
Preheat the oven to 175°C (350°F) and thoroughly grease a baking dish with non-stick cooking spray.
Combine the raisins and rum in a small bowl. Microwave for 30 seconds, then set aside to soak.
In a large bowl, whisk the eggs. Add milk, sugar, melted butter, cinnamon, salt, Apple Pie Seasoning, and vanilla. Whisk until well combined.
Fold in the torn croissants, diced apple, and the raisin mixture. Stir gently to coat everything.
Pour into the baking dish, spreading the fruit evenly. Dust the top with a bit more Apple Pie Seasoning.
Bake for 55 to 60 minutes, or until golden, puffed up, and set in the middle.
Once done, let it sit for 10 minutes, then serve warm with a scoop or two of vanilla ice cream.
