Jerk Chicken

Smokey Joe's Jerk Seasoning is a unique and flavorful blend of spices and herbs with a touch of heat that is perfect for adding a Caribbean flair to your favorite dish. This gluten free seasoning is made with 100% all-natural ingredients and has a rich and smokey taste that's perfectly suited for marinating chicken and pork, and to use as a wet marinate as well as a dry rub.

what you need:

  • 6-8 chicken thighs & drumsticks, bone-in and skin-on

  • 2 tablespoons of Smokey Joe's Jerk Seasoning

  • 2 tablespoons of olive oil

  • 2 tablespoons of soy sauce

  • 1 lime, juiced

  • 2 garlic cloves, minced/finely chopped

  • 1 teaspoon of grated fresh ginger

  • 1 teaspoon of honey

what to do:

  1. In a small bowl, mix together the Smokey Joe's Jerk Seasoning, olive oil, soy sauce, lime juice, garlic, ginger, and honey to create the marinade.

  2. Place the chicken in a large resealable plastic bag and pour the marinade over the chicken.

  3. Seal the bag and massage the marinade into the chicken, making sure each piece is well coated.

  4. Place the bag in the refrigerator and let the chicken marinate for at least 2 hours, or overnight for the best results.

  5. Preheat your grill to medium-high heat.

  6. Remove the chicken from the marinade and discard any excess marinade.

  7. Grill the chicken over direct heat, skin-side down, for about 5 minutes, or until the skin is crispy and charred.

  8. Flip the chicken and continue to grill for another 10-15 minutes, or until the internal temperature of the chicken reaches 165°F. (or alternatively cook in med - hot oven)

  9. Remove the chicken from the grill and let it rest for 5-10 minutes before serving.

  10. Serve the jerk chicken with your favorite sides, such as savoury rice and beans or a fresh crisp salad.
