What you need
2 tablespoons brown sugar, packed
2 tablespoons freshly squeezed lemon juice
1 tablespoon Dijon mustard
2 cloves garlic minced
2 tablespoons of Smokey Joe's Lemon & Herb blend
Sea salt and freshly ground black pepper, to taste
4 (5-ounce) salmon fillets
2 tablespoons chopped fresh parsley leaves
2 zucchini - cut into noodles using a spiralizer.

What to do
Preheat oven to 200 degrees celsius.
Lightly oil a baking tray or use baking paper
In a small bowl, whisk together brown sugar, lemon juice, Dijon, garlic, Smokey Joe's Lemon & herb blend, season with salt and pepper, to taste.
Place salmon in the herb mixture to coat evenly
Place zucchini noodle on tray, drizzle with olive oil, salt and pepper
Place into oven and cook until the fish flakes easily with a fork, about 14-16 minutes.
Serve on a warm platter.. Enjoy .....
