smokey joe's rubs and seasonings are so versatile they can be used in many ways like adding a unique flavour to a hummus to lift the flavour to another level
What you need
2 (15.5 ounce) cans chickpeas, drained
½ cup water
¼ cup tahini -sesame-seed paste
¼ cup fresh lemon juice
2 tablespoons olive oil
1 tablespoon of Smokey Joe's Chipotle & lime rub
2 cloves garlic
100gr roasted red bell peppers,
6 sun-dried tomatoes, drained
½ cup chopped coriander (cilantro)
sea salt to taste
ground black pepper to taste
what to do
Place the chickpeas, water, tahini paste, lemon juice, olive oil, chipotle & lime rub, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base.
Transfer to a serving bowl, spread around the plate creating a hollow in the centre, drizzle with olive oil, sprinkle with some chipotle and lime rub & black sesame seeds
