Beef was seasoned with @smokeyjoesrubs espresso rub, kissed with red wine oak smoke and beer braised until it probed like butter.
Here's why I love a good coffee rub!! And trust me, you can't taste the coffee, if anything it creates an rich, earthy flavour. Did you know the acidity levels of the coffee replicate the tannins in a good wine, which allow amplification of the flavours. But it doesn't stop there. Coffee rub on beef can also act as a tenderiser. Who would have thought 🤷🏼♀️
I cooked low n slow at 285F until in the smoke and then braised internal temp reached 208F and the beef probed like butter on my @chargrilleraustralia double play with lump.
Oh, and don't forget about that bone marrow.........
