What you need
12-16 lamb cutlets
2 tbls Smokey Joe's
Tuscan herb mix
Juice of ½ lemon
Zest of one lemon
Tuscan herb mix
2 garlic cloves
What to do
1. Pre-heat the BBQ or pan on high. In a large mixing bowl, combine the Tuscan herb mix with a generous lug of olive oil, the garlic, lemon zest, juice to create a paste. Add the lamb massage well and coat with the marinade on all sides. Let marinate for at least 1 hour or 2 hours if possible.
2. Grill the lamb cutlets for 3-5 minutes on each side depending on your preference (lamb should be slightly pink)
3. Sprinkle the lamb with some sea salt and serve with pesto and a green salad or coleslaw. .
